Peel & slice apples into thin slices, place them into a large saucepan.

Add water and cinnamon (if using), mix well.

Heat on medium low until the mixture comes to a boil, this should take 5-10 minutes.

Once at a boil, cover apples & reduce heat to a simmer. Continue cooking for approximately 20 minutes, or until apples are mushy.

Stir in brown sugar (if using) & mash apples with a potato masher for a chunky applesauce, or use a vitamix blender/food processor for a thinner consistency.
