what is aquafaba?
The liquid you drain from canned chickpeas is called aquafaba. Many people discard this fluid, unaware that it contains carbohydrates & proteins from the chickpeas, making this a great value-added food!

ingredients
1 cup aquafaba (the liquid from a 14 oz can of chickpeas)
7 oz chocolate chips (semi-sweet or dark)
1 tbsp lemon juice
2 tbsp maple syrup
instructions
Add aquafaba, lemon juice & maple syrup to a bowl. Mix well to combine.
Using a hand or stand mixer, whip the aquafaba until stiff peaks form (approximately 10 minutes).*
Melt the chocolate in the microwave or using the double boiler method.
Using a spatula, gently fold the melted chocolate into the aquafaba mixture (the aquafaba may deflate, but that's normal)
Spoon mousse into four individual glass bowls & set in fridge for three hours or overnight.

*aquafaba cannot be over-whipped like egg whites, so continue whipping until the aquafaba doesn't fall when the bowl is flipped*
