Apple Latkes

6 small potatoes

1 apple, cored

1/4 cup all purpose flour, more as needed

salt to taste

1-2 tbsp oil, more as needed

1 pinch sugar to taste

instructions

Shred potatoes and apple using a food processor, spiralizer, or grater (in batches if necessary). In a bowl, combine shredded potatoes and apple with flour, sugar, and salt. Dough should be thick.
 

Heat oil in a skillet over medium-high heat. Add mounded tablespoons of the dough to pan and gently flatten. Cook 2 to 3 minutes, until golden. Flip and crisp other side, approximately 1 to 2 more minutes. 
 

Repeat with remaining dough.
