ingredients
gnocchi:
10-12 small multicolored potatoes, peeled & cubed
1-1 1/3 cup all-purpose flour
1/3 tsp salt
veggies:
1 cup mushrooms, chopped
2 cups spinach, chopped
1 tbsp olive oil
instructions
Peel & cube potatoes, add them to a pot of water and bring to a boil. Cook on medium heat for 15 minutes, or until tender, drain. Transfer potatoes back to pot and mash with a potato masher.
Remove mashed potatoes onto a floured surface. Add 1 cup of flour to start & knead with your hands until a firm dough forms, add more flour as necessary. Once complete, the dough should not be too sticky, it should be firm & malleable.
Ball the dough & cut into four equal segments. With your fingers, roll each portion into strands. Using a knife cut the strands into 1-inch pieces and form into small ovals.
Add the shaped gnocchi to a pot of salted boiling water. In the meantime, heat olive oil in a pan over medium heat and saute veggies until mushrooms are tender and spinach is wilted. Once the gnocchi rise to the surface (about 2-4 minutes), remove them using a slotted spoon.
Combine finished gnocchi with veggies & your favorite seasonings, enjoy!
