ingredients
2 cups all purpose flour + 1 1/2 tsp baking powder
1/4 cup coconut oil (solid), or butter (preferably local or organic)
3/4 cup plant-based milk, or dairy milk (preferably local or organic)
instructions
Preheat oven to 425 degrees F.
In a mixing bowl, add flour mixture and coconut oil. Using a pastry cutter or two forks, mix the flour and coconut oil until the mixture is fine like sand.
Stir in milk until a soft dough forms and no longer sticks to the sides of the bowl. Knead the mixture until just combined, do not over-knead.
Lightly dust a cutting board or counter-top with flour and place dough on surface. Roll the dough until it is approximately 1/2 inch thick. Use a cookie cutter, or cup to cut biscuits into a circle (about a 2 inch circle). Transfer dough to a greased baking sheet.
Bake for 10 minutes, or until golden brown and biscuits have risen slightly. Remove from oven & serve with gravy!
