2 cups lentils, cooked according to package instructions
1 onion (or shallot), minced
1 tbsp olive oil
1/2 cup all purpose flour
2 cups plant-based milk, or regular dairy milk (preferably local or organic)
1 tsp dried thyme
1/2 tsp crushed red pepper
instructions
Heat olive oil in a medium pan over medium-high heat. Add onion and saute until translucent, approximately 4-5 minutes.
Add flour and stir until the flour evenly coats the onions.
Add the milk slowly & continuously, whisk as you pour to prevent lumps from forming. When all the milk is added, stir until the sauce begins to thicken.
Add the spices and cooked lentils to the thickened gravy. Simmer mixture on low heat for 5 more minutes.
