ingredients
1 can chickpeas, rinsed & drained (save the liquid to make chocolate mousse)
2 cups fresh spinach
1/2 onion (or shallot), chopped
2 tbsp all purpose flour + more as necessary
3/4 tsp salt
*optional spices: garlic powder, onion powder, parsley, basil*
instructions
Preheat oven to 350 degrees F.
Add the chickpeas, spinach, onion, flour & salt (& optional spices) to a food processor to blend. The mixture should be able to form patties, if not add more flour as necessary.
Use an ice cream scoop or spoon to form the falafel & place on a greased baking sheet. Flatten the falafels slightly & spray tops with cooking spray.
Bake for about 30 minutes, carefully flipping them halfway through. When done, they should have a crispy exterior & soft interior.
