ingredients

burgers:

2 cups mushrooms, chopped

1/2 onion (or shallot), sliced

1/2 tbsp olive oil

1/3 cup barley, cooked

1/2 can chickpeas, drained & rinsed (save liquid for chocolate mousse)

1/4 cup all-purpose flour (or bread crumbs, if available)

salt & pepper

1/4 tsp garlic powder & thyme, dried (optional)

10-12 multi-colored potatoes, cut lengthwise

2 tbsp olive oil

salt

instructions

Pre-heat the oven to 425 degrees F.

 

burger:

Combine the mushrooms, onion, olive oil, (garlic powder & thyme), salt & pepper in a large bowl. Then, spread mixture onto a baking sheet in a single layer. Put in oven and cook for about 20 minutes, or until veggies are tender.

Using a food processor, blend cooked mushrooms & onions, and chickpeas until smooth. Remove mixture into the large bowl previously used, add the barley and flour (or breadcrumbs, if using), and add more flour & seasonings, as needed.

​

Spray the baking sheet used previously. Shape mixture into four burger patties and place on baking sheet. Cook for 15-20 minutes, or until burgers are firm and golden, flipping patties half way.

Serve on your favorite bun with spinach & tomato, or your own favorite toppings!

*these can be frozen before or after cooking*

fries:

Combine cut potatoes, olive oil & salt on a sheet pan. Cook in oven with burgers for 15-20 minutes, or until crispy & golden brown.
